Homemade Ice Cream Bars

Trying to beat the heat with your kids without overloading them with sugar? As a nutritionist, I’m always looking for healthy snacks for my kids! Although my kids don’t always agree with my snack ideas, I’ve come up with a few ways to get them eating clean. 

Saying my kids LOVE ice cream is an understatement. As I’m sure it is for you too. Heck I love ice cream too! With this recipe though they can eat more than one in a day and I wouldn’t mind. They can eat it right before bedtime and I wouldn’t mind. They could even ask for it right after breakfast and it’d say ok! These are more like smoothies frozen on popsicle sticks. I bought this ice cream mold on Amazon. It comes with reusable popsicle sticks and disposable ones. It also comes with a small recipe booklet. I haven’t tried any of the recipes myself but they do look good! If you try them let me know how they come out! 

Now let’s make these delicious, kid approved healthy ice cream bars that I’m sure your kids will love too! First add 2 cups of frozen fruit to your blender. What ever fruit you desire is fine. My kids like mango or mixed berries. I just grab the big bag from Costco to last us! Next add 1/2 a cup of unsweetened vanilla Almond Milk. You have to be careful with sweetened almond milk as it tends to have A LOT of added sugar. 

As you begin blending the fruit, slowly add more of the almond milk to get the consistency you like. I like my ice cream bars to have a smoothie consistency. I don’t want them to be too liquidy. As a hint, the more liquid you add the longer it takes for them to freeze. If you’re kiddos are as impatient as mine, trust me you want them to freeze quicker. If you’re looking for a good blender, you really don’t need to get too fancy with it. I use the baby bullet. It gets the job done and the kids like it because they feel like it’s theirs.

Once the frozen fruit is blended, add the rest of the almond milk, plus the honey, banana, and spinach powder and blend until smooth. I make my own spinach powder. It’s super easy! I do it because I got tired of wasting spinach. I feel like spinach goes bad so quickly and I hate wasting food! Spinach powder can last 6 months to a year! If you need a recipe, check out my blog on spinach powder. Adding just a little bit of spinach powder can add some serious nutrients to your dish. Spinach powder is packed with iron, folate, and vitamins A & C to name a few. As a mom of picky eaters I have to fit these vegetables in where I can! 

Now your ice cream bars are done! Pour into the mold and place in the freezer for at least 3 hours or until frozen completely. remember my hint: the more liquid you mix with the frozen fruit the longer it’ll take to freeze. 

Ingretients

  • 2 cups frozen fruit
  • 1 cup almond milk
  • 1/2 tsp spinach powder
  • 1/2 banana
  • 1 tbs raw honey

Directions

  1. Place frozen fruit and 1/2 cup of almond milk in the blender. Blend until smooth.
  2. Add remaining ingredients and blend.
  3. Pour mixture into molds and place in the freezer for 3+ hours.
  4. Enjoy!
